Ingredients:
- 1 whole rotisserie chicken from the deli section of your grocery store
- 1 bag/container of dried cranberries (not sweetened - look at the ingredients...there should only be one: "cranberries"
- 1 bag/container walnuts
- 1 red onion
- balsamic vinegar
- low fat mayonaise
- salt & pepper
Directions:
- Remove all meat from your rotisserie chicken. Do not include the skin. This is high in fat.
- Chop chicken into small pieces and put in bowl.
- Chop onion in small pieces (as much as you want)
- Chop walnuts into small pieces
- Combine chicken with onion, dried cranberries, and walnuts.
- Stir in 1-2 spoon fulls of low fat mayo (obviously...the less the better)
- Pour balsamic vinegar over the mixture and stir. (use as much balsamic vinegar as you want). I use a sweet balsamic vinegar and it's great!
- Season with salt & pepper to taste and stir until all ingredients are mixed
I like to eat my celery with this. I use the celery like a spoon to scoop it up. Eat like a sandwich with whole wheat bread, or put a few scoops over a bed of greens with balsamic dijon dressing. Yummy!!
